Strawberry Crisp With Nutty Hemp Seed Topping

Image
Fresh strawberries in a delicious vegan and gluten-free crisp. Follow Foods For Long Life on Facebook and Pinterest . Strawberries are in Season My little strawberry patch is producing in full force and although my favorite way of enjoying them is to just pop them in my mouth, I love making this healthy strawberry crisp.  Strawberries from my garden. To add additional fiber and structure, I combine the strawberries with a few delicious pears and to get a good dose of omega-3, I add raw, shelled hemp seeds.  I like the taste of organic coconut sugar in this recipe but you can also use regular organic cane sugar.                        *                                 *                                  * Strawberry Crisp Vegan, Gluten Free (...

Mango Cake - The Perfect Vegan And Gluten Free Easter Dessert

Image
This gluten and dairy free dessert is the perfect ending to your Easter Brunch. Follow Foods For Long Life on Facebook and Pinterest . My Favorite Mango Our favorite little mangoes are in season. They come with many names like Manilla, Ataulfo, Champagne, and Honey,  with slight variations and places of origin. But they are all small (around 9 to 11 ounces) and as sweet as sugar. Doug and I have been under the weather so to cheer ourselves up, and with the excuse of having to create an Easter dessert for the blog, we created a cake on Sunday with our very favorite fruit. These are smaller, less stringy, and much sweeter than the large, more commonly found mangoes. Easter Sunday is a great time to have family and friends over for brunch and this dessert is a good choice. It's vegan and gluten free so besides delighting everyone's taste buds, it will accommodate most everyones dietary issues. (See "Variation" below for a whole wheat version of the recipe.)   ...

Dark Chocolate Flourless Crinkle CookiesVegan, Gluten Free And Made With Aquafaba

Make these dark chocolate crinkle cookies for your Valentine! Follow Foods For Long Life on Facebook and Pinterest . Do you have a Gluten Free Valentine? Are you looking for a special Valentine's day treat that is vegan and gluten free? Well, here's a popular chocolate crinkle cookie with a special twist. Besides being flourless, it's made with meringue produced from aquafaba instead of egg whites! What's Aquafaba? Aquafaba has been all the rage in the vegan community. It's basically bean juice. You know, the stuff that you usually throw out when you open a can of beans. It's a great egg white replacer and whips up to make a beautiful, white and fluffy meringue. The first time you make it, it will blow your mind! When you drain a can of beans, save the juice!  I have just started experimenting with this so you will be seeing more recipes as I continue my experimentation. But for today, I want to share this decadent cookie recipe in time for Valentine's day...

Jill Nussinow's New Book Is Here!Vegan Under Pressure - Vegan Tapioca

Image
Vegan tapioca is delicious and easy to make! Follow Foods For Long Life on Facebook and Pinterest. Can't Live without my Instant Pot I honestly can say that the Instant Pot pressure cooker has changed the way my husband and I cook. We use it in the morning to make oatmeal. We use it to cook at least one dish at every meal. And now, we use it to make tapioca. But before I go into that, let me talk about Jill Nussinow (the Veggie Queen). I met Jill about 5 years ago at a vegan potluck at the Sonoma Humane Society. She was giving a demonstration on how to use an electric pressure cooker. I had an old stovetop pressure cooker that had been gathering dust in the back of my closet for at least 10 years, so I wasn't convinced I'd ever use another one. It actually took me a few more years before I broke down and bought an Instant Pot but now I can hardly imagine my life without one. Jill Nussinow, The Veggie Queen The biggest challenge in using a pressure cooker, is to know how l...

Image
A simple and delicious way to enjoy fresh figs. Follow Foods For Long Life on Facebook and Pinterest . Preview my eBook, Health Begins in the Kitchen . Fresh Figs What's better than a fresh fig? My wonderful neighbors surprised me with a basket of large, juicy, fresh figs for my birthday. I'm in heaven! Of course my favorite way to eat a fig is to just stuff one in my mouth but if you want to serve them as an elegant dessert with a fancy, schmancy name, here's a simple preparation. Fig Carpaccio with Balsamic Reduction Carpaccio is the name of pretty much any raw meat, fish, vegetable or fruit with a drizzle of vinegar, oil, pepper, and/or other seasonings. Sweet figs go very well with the complex flavor of balsamic vinegar, especially when it's reduced. Pretty Simple Preparation Start with some big, juicy figs - one large or two small figs per person. This large fig weighed in at nearly 3 ounces. Thinly slice each fig and place on a small plate. Prepare the balsamic ...

Ancient Einkorn WheatTolerated By Many With Gluten IntoleranceEinkorn Vegan Banana Bread Recipe

Image
Many people with gluten sensitivities tolerate einkorn wheat. Vegan einkorn banana bread with chocolate chips and walnuts. Follow Foods For Long Life on Facebook and Pinterest. Einkorn Wheat My husband is sensitive to gluten. The minute he eats a piece of bread, he sneezes or gets stuffy. Worst of all (for me), he snores at night. So now he mostly avoids wheat. A few months ago Doug bought some Einkorn wheat flour and Einkorn whole wheat pasta to try. It's an ancient form of wheat that was cultivated thousands of years ago. Modern wheat has been hybridized for various reasons (improve yield, increase gluten content, etc.) and some think that this has lead to the increase in wheat sensitivity. Although people with celiac should not consume any form of wheat or grain that contains gluten, some gluten sensitive people have reported little or no reaction to this type of wheat. Doug has had no reaction to items baked with All-Purpose Einkorn flour or eating Einkorn whole wheat pasta (w...
