Besides being flourless, it's made with meringue produced from aquafaba instead of egg whites! What's Aquafaba? Aquafaba has been all the rage in the vegan community. It's basically bean juice. You know, the stuff that you usually throw out when you open a can of beans. It's a great egg white replacer and whips up to make a beautiful, white and fluffy meringue.
